Perfect Protein Pancakes

 

These pancakes are the easiest and most “realistic” healthy pancakes I’ve ever made! They are perfect because they can fit into almost any diet, and are made of just real food!

Instead of flour, this simplified recipe uses a clean protein powder of choice, eggs and fresh overripe plantain as the base. Add in a little vanilla extract and a dash of sea salt and it’s a perfect pancake that tastes like the real thing! I recommend serving it with butter and maple syrup, but you do you!

Perfect Protein Pancakes

Ingredients

2 Overripe Plantains

4 large eggs

2 scoops of protein powder (I created this recipe with this one – but feel free to experiment!)

1 tablespoon of pure vanilla extract

Dash of sea salt

 

Directions

In a blender, combine peeled and cut plantain, eggs, vanilla extract and protein powder.

Blend in a high powered blender (preferred) until super smooth – this is what you want for the fluffiest pancakes. You don’t want them to be too dense so make sure you give it time as the ingredients will create a thick fluffy batter almost double the size of the raw ingredients. That’s how you know your batter is ready bestie.

Drop 1/4 cup of batter onto a large, buttered nonstick skillet heated to low, spread into a pancake shape with the back of the measuring cup, making it as thin as possible.

Flip once bubbles start to pop or it starts to look cooked on the edges. There may not be any bubbles depending on your batter (on that note I recommend reblending as needed for a more aerated batter if your batch takes longer to cook) but you can always flip up a corner to check. For thicker pancakes you can also spread it thicker and cover with a lid for more even cooktime while keeping that perfect golden brown!

 

Serve with butter and maple syrup or fresh fruit and whipped cream! I love enjoying these when I am craving something sweet or nostalgic. It’s great knowing that they are a healthier option made with real food and high in protein thanks to the pea protein and only healthy complex carbs from the plantain instead of processed flour!
