High Protein Low Carb Wraps

I needed some wraps in a pinch and couldn’t find a good low carb recipe that I had all the ingredients for that day – so I created one and let me tell you – it’s easier than I expected and so so versatile! Plus with this macro and ingredient breakdown I didn’t even feel bad eating them all that same day! Bonus – the next time I made them they were a hit with the kids too! These are the quick, high protein low carb CLEAN wrap that you’ll be making on repeat bestie!

Low carb, high protein, super fast.

Simple to make and extra protein from the gelatin – these are a go to that are quick and delicious for wrapping any sort of food and versatile enough to make into a breakfast, lunch, dinner or snack! I had them with romaine, turkey and cheddar, then later on with my crockpot pulled pork and cheddar, and finally with my easy mashed cauliflower and some deliciously pan fried butternut squash. If I wasn’t on a low carb day I’d have even tried them with some honey and banana – that would be delish! The options are endless – and while I made these as a sheet pan recipe and cut them into squares for a flatbread style wrap, they could be made circular as well. With gelatin being involved you would need to work quickly to fry them up before it sets – so a large griddle or multiple pans would be necessary bestie. But, for a fast delicious and compliant high protein wrap, sheet pan for 15 minutes is the winning move on a busy weeknight like the one these were developed on.

High Protein Low Carb Wrap Recipe

– 4 large eggs, pastured if possible 

– 1/4 cup water (lukewarm not hot works best)

– 1/8 cup coconut flour

– 1/8 cup grassfed beef gelatin (NOT collagen peptides)

– 1/2 teaspoon xanthan gum

– 1/4 teaspoon sea salt or himalayan salt

 

Hey champ, you’re about to have a WHOLE BATCH of delicious wraps everyone can eat in like 20 minutes ok? Stay with me.

– Preheat your oven to 350F and line a baking sheet with parchment paper, get out your ingredients and roll up your sleeves.

– If you have a stand mixer, grab that out and put the whisk on it. I have this affordable one but manifesting a KitchenAid low key.

Otherwise a medium mixing bowl and whisk or even a good blender will do to get this batter going.

– Start with the eggs, get them all whipped up, then add in the water, whisk/mix/whip till it’s perfectly smooth. 

– Mix in the coconut flour and xanthan gum, if you want you can mix them separately on the side then add it into the wet mixture like grandma used to do.

Here’s the part you need full attention for – adding the gelatin bestie. This stuff CONGEALS and we want that. It is not only adding an additional 15g of protein to the recipe, but also holds it together better.

– Once your oven is ready, slowly sprinkle in the gelatin while mixing, and prepare to quickly pour onto your parchment lined baking sheet.

– Quickly pour in a line across the baking sheet, spreading it out evenly until the mixture is spread as thin as possible without seeing the paper through it.

– Bake for about 15-20 minutes, taking out when it’s just cooked, not starting to brown

– Let cool for 5 minutes and cut into squares, then serve as a flatbread like I did, as a larger wrap or even as a tortilla!

I loved making these in the oven because it was a 5 minute prep time and 15 minutes passive time in the oven, but if you’re able to work quickly and man a skillet you can totally fry them like pancakes into a tortilla shape.

I love my Caraway pan for things like that, but a large nontoxic griddle would be even better since you would likely fit more on there at once. Caraway has one too that goes over your burners but the one I linked from Amazon is a plug in which I feel would give you more cooking space. The issue is the gelatin starts to set quickly so you really need to get them onto the cooking surface entirely and spread thin before that happens. In my case it was starting to set at about the 5 minute mark once the gelatin was mixed into the batter.

That’s what I channeled anyway. It really is a good recipe if I do say so myself. I was consistently making the simple Paleo Tortillas from Steph Gaudreau, but those don’t work on my less than 40g net carb days, so I needed an alternative and these kind of check all my boxes. I hope you try them.
