Buffalo Chicken Bites

Buffalo chicken dip is delicious but these Buffalo Chicken Bites? Level up bestie. You can make them as part of my winning Game Day spread or as a versatile protein snack that works as a main dish too! We like them with a side of veggies or over rice even. The Primal Kitchens clean buffalo sauce is now at Costco too, so you’d best believe these are on the menu more and more with that price point for this giant bottle! 

No Costco? No problem – any buffalo sauce will work.

This is just the best one by far. Ingredient wise, flavor profile, all the things. The very best. If you must, you can sub in any buffalo sauce and just ensure you cut the spice as needed depending on how it tastes. For the love of all things healthy please skip the seed oils though – the less inflamed the population is the faster we can save the world after all. I digress, please note that I made the coconut milk add in optional but I do recommend cutting the spice and intensity with it, or another milk option. I’ve done heavy cream or half and half in the past, but coconut milk is my favorite option. The cool thing is, you can do whatever you want and it will still be delish! Take a peek at the recipe below, and if you can get your hands on these ingredients, I bet you’ll love the outcome of 20 minutes to whip these up for your fam. Tell me what you think when you do.

Buffalo Chicken Bites Recipe

– 1 lb chicken breast, cut into chunks

– 3/4 cup Primal Kitchen Buffalo Sauce

– 1 tablespoon ghee (or butter)

– 1 teaspoon black pepper

– 1/4 to 1/2 cup coconut milk

– Salt & pepper to taste 

 

Bestie all you need for this is a saucepan and a stirring / serving utensil once you cut the chicken. Don’t overcomplicate things.

Get that burner on with your tablespoon of cooking fat (butter or ghee is best for flavor but you do you)

Once your chicken is cut into chunks, just carefully plop it into the hot pan at about medium heat.

Sprinkle some salt and pepper to cook it in, and keep it turning til every piece of chicken is deliciously crispy and golden browned all around.

The great news is you’re almost done at this point. Just add in the buffalo sauce and cream (if using) then give it a nice stir

You’ll now need to reduce your heat to simmer and stir occasionally as the sauce reduces a little. 

While you’re waiting, set out all of the remaining ingredients for your accompinaments. I recommend either serving it with a side of seed oil free chips (we love the ones from Thrive Market) and/or some fresh veggies. If you want to be really comprehensive, you can set out a little sandwich bar with cheese slices, lettuce leaves, tomato slices, dressings and buns. This makes a delicious sandwich meat. Like a sloppy joe but not. Make sure your lettuce leaves are big enough to be used as buns for your bunless squad members, and if you want to really impress them, make some veggie base bun alternatives like sliced rounds of fried potatoes or fried sweet potatoes. Those are SO good with this. But if time is limited, a lettuce wrapn for your nonbread people alongside regular buns for the commonfolk is always a hit.

Bestie, once that sauce reduces to a nice thickness these little nuggets of deliciousness are READY. About as easy as it gets. Everyone’s favorite buffalo chicken meal in a jiffy, with plenty of options for how to serve it.
